Custom made santoku sushi chef's knife is made from 5Cr15MoV Stainless Steel to resist corrosion/rust. This style of knife works great from chopping vegetables, to slicing meat and sushi rolls.
The handle is made from red/black kirinite, (a synthetic material), that resists cracking or warping. Besides the distinctive look, kirinite maintains a good hand grip, even when wet. The handles are pinned with 2 brass pins and one fancy mosaic pin in the middle of the scales. The knife also sports stainless steel bolsters for a modern look.
