Fantastic Grits Casserole Recipe

This grits casserole recipe is a creamy accompaniment for shrimp, fish, or other meats such as pork and chicken.

Preheat oven to 325 degrees.

Bring to a boil:

1 cup quick cooking hominy grits

3 cups milk

1 teaspoon salt

And and cook until thickened:

2 beaten eggs

3/4 cup milk

Stir in and blend well:

1 cup shredded cheddar cheese

1/2 cup butter

Bake in a buttered baking dish 45 to 50 minutes and 325 degrees. Serve hot!

 

This is a fun recipe to tinker with. Experiment with different types of cheeses. I also like to add finely chopped onions and jalapeños to taste.
